Southwest Almond Wrap1 sundried tomato flavored wrap Toothpicks Double Onion Wrap1 wrap, any flavor Nutty Brie1 8 oz round Brie Southwest Rice1/2 cup Southwest Margo's Nutz 1/2 cup brown rice 1 15 oz. can black beans (use juice) 1 cup salsa, med. heat 1 1/4 cup water 2 Tbs. diced onion or 1 Tbs dried minced onion 1 clove garlic, diced or 1/4 tsp garlic powder 1/4 tsp cayenne 1/4 tsp chili powder 1/2 tsp. salt Combine all ingredients in a large baking dish. Cover and bake at 350 degrees for one hour. Cook in a crock pot cook for 4 hours on high, reducing water by 1/4 cup. Yields about 5 cups. This dish is gluten free and vegetarian; great with any meal or it can 'stand alone'. Add 1 pound of diced chicken, pork, or ground beef to made an entire meal. It is mildly spicy and makes a great side dish for any Mexican style meal. Use leftovers in burritos or freeze for an easy lunch. Baked Potato Lunch 1 scrubbed potato 2 - 3 Tbs. any Cheese, (cheddar, jalapeno, feta, cottage cheese; be creative) 2 -3 Tbs. favorite Margo's Nutz almond slices Microwave your potato, slice open into quarters and top with your cheese. Heat again if desired. Top with the almond slices and you are ready to eat a quick and nutritious lunch! Crunchy Chicken1 - 2 Chicken Breast(s) 3/4" thick 3 Tbs. favorite Margo's Nutz almonds, crushed Roll the breast in the crushed almonds. Place in baking dish glazed with olive oil and bake at 400 degrees till juices run clear, about 18 minutes. Serve with a veggie or salad Feisty Fish1 - 2 fillets of your favorite fish (I love Tilapia) 2 Tbs. Southwest Margo's Nutz Glaze a baking dish and place fillets in it. Broil till almost done, remove and sprinkle Margo's Nutz on top, return to oven for 2-3 minutes. Enjoy! Almond Chicken Salad2 half chicken breasts 1 head of Romaine lettuce or equivalent volume of Spinach 1/4 C. chopped scallions 3 Tbs. Margo's Nutz almonds, your choice of flavor 2 Tbs. sesame seeds 1/3 C. chow mein noodles Dressing: 1 Tbs. sugar 1 Tsp. salt 1/4 Tsp. freshly ground pepper 1/4 C. olive oil 2 Tbs. vinegar 1 Tbs. sesame oil Cook, cool, and shred the chicken. Prepare greens and mix all ingredients together. Toss with dressing right before serving. Twice Baked Potatoes4 baking potatoes, scrubbed 3/4 C. grated cheddar cheese 2 Tbs. butter 1/4 C. sour cream or French onion chip dip salt and pepper to taste 4 Tbs. Margo's Nutz Cheddar, S. Cr. & Onion, Sea Salt, or Southwest Bake potatoes. Cut lengthwise into halves. Scoop out centers into a mixing bowl. (Using an oven mitt to hold the potatoes is helpful!) Add cheese, butter, sour cream, salt and pepper then mix with spoon, mashing till potatoes are somewhat smooth. Stir in nuts until combined and spoon into potato skin halves. Bake a second time in regular oven at 375 degrees for 10 minutes or cover with wax paper and microwave for 2-3 minutes. These are great leftover treats for lunch.
