Southwest Almond Wrap

1 sundried tomato flavored wrap

2 Tbs. whipped cream cheese

2 Tbs. GO NUTS! Southwest flavor

Toothpicks

Optional salsa

Spread wrap(s) with cream cheese. Sprinkle the cream cheese with 2 Tbs. of Southwest flavor GO NUTS! seasoned sliced almonds. Roll up the wrap and slice with a sharp knife. Spear with toothpicks and serve with salsa if desired.


Double Onion Wrap

1 wrap, any flavor

2 Tbs. French Onion Chip Dip

2 Tbs. GO NUTS! Sour Cream and Onion

Optional 1 Tbs. chopped scallions

Spread wrap with french onion dip. Sprinkle the dip with 2 Tbs. Sour Cream & Onion flavor GO NUTS! seasoned sliced almonds. Roll up the wrap and slice with a sharp knife. Spear with toothpicks and serve. For added onion zest, sprinkle the wrap with chopped scallions before rolling.


Nutty Brie

1 8 oz round Brie

6 Tbs.  favorite GO NUTS! almond slices

Crackers

Glaze a small round baking dish with olive oil. (A glass saucepan or corning ware works great). Sprinkle 3 Tbs. of  GO NUTS! almonds on the bottom of the dish. Place the Brie on top. Cover and bake 10 minutes in a 300 degree oven. Sprinkle the remaining 3 Tbs. of nuts on the top and bake uncovered for an additional 5 - 10 minutes. Serve with your favorite crackers or fruit.

 

Southwest Rice

1/2 cup Southwest GO NUTS!

1/2 cup brown rice

1 15 oz. can black beans (use juice)

1 cup salsa, med. heat

1 1/4 cup water

2 Tbs. diced onion or 1 TBS dried minced onion

1 clove garlic, diced or 1/4 tsp garlic powder

1/4 tsp cayenne

1/4 tsp chili powder

1/2 tsp. salt 

Combine all ingredients in a large baking dish.  Cover and bake at 350 degrees for one hour.  Cook in a crock pot cook for 4 hours on high, reducing water by 1/4 cup. .  Yields about 5 cups.

This dish is gluten free and vegetarian.  It is a great with any meal or can 'stand alone'.  With the addition of 1 pound of diced cooked chicken, pork, or ground beef, it becomes a meal for a meat lover.  It is mildly spicy and makes a great side dish for any Mexican style meal.  Make more than you need and use leftovers in burritos on another night.    This freezes very well for an easy lunch.  Make a note on your dry write board and you are on your way to a second meal with no extra work!


Baked Potato Lunch

1 scrubbed potato

2 - 3 Tbs. any Cheese, (cheddar, jalalpeno, feta, cottage cheese; be creative)

2 -3 Tbs. favorite GO NUTS! almond slices


Microwave your potato, slice open into quarters and top with your cheese.  Heat again if desired.  Top with the almond slices and you are ready to eat a quick and nutritious lunch!


Crunchy Chicken

1 - 2 Chicken Breast(s) 3/4" thick

3 Tbs. favorite GO NUTS! almonds, crushed


Roll the breast in the crushed almonds.  Place in baking dish glazed with olive oil and bake at 400 degrees till juices run clear, about 18 minutes.  Serve with a veggie or salad


Feisty Fish

 1 - 2 fillets of your favorite fish (I love Tilapia)

2 Tbs. Southwest GO NUTS!


Glaze a baking dish and place fillets in it.  Broil till almost done, remove and sprinkle GO NUTS! on top, return to oven for 2-3 minutes.  Enjoy!  


Almond Chicken Salad

2 half chicken breasts

1 head of Romaine lettuce or equivalent volume of Spinach

1/4 C. chopped scallions

3 Tbs. GO NUTS! almonds, your choice of flavor

2 Tbs. sesame seeds

1/3 C. chow mein noodles

Dressing:

     1 Tbs. sugar

     1 Tsp. salt

     1/4 Tsp. freshly ground pepper

     1/4 C. olive oil

     2 Tbs. vinegar

     1 Tbs. sesame oil


Cook, cool, and shred the chicken.  Prepare greens and mix all ingredents together.  Toss with dressing right before serving.  Carbs, protein, and greens all in one dish!


Twice Baked Potatoes


4 baking potatoes, scrubbed

3/4 C. grated cheddar cheese

2 Tbs. butter

1/4 C. sour cream or French onion chip dip

salt and pepper to taste

4 Tbs. GO NUTS! Chedar, S. Cr. & Onion, or Ranch

Bake potatoes.  Cut lengthwise into halves.  Scoop out centers into a mixing bowl.  (Using an oven mitt to hold the potaoes is helpful!)  Add cheese, butter, sour cream, salt and pepper then mix with spoon, mashing till potatoes are somewhat smooth.  Stir in nuts until combined and spoon into potato skin halves.  Bake a second time in regular oven at 375 degrees for 10 miuntes or cover with wax paper and microwave for 2-3 minutes.  These are great leftover treats for lunch.
